I’ll be honest…this Avocado Toast Recipe has been my hyper fixation meal for two weeks straight. Why? Well, as someone who is working to support her thyroid health through balanced eating, this meal is the perfect energy-boost I need to kick off my day! Plus, this recipe has allowed me to absolutely master the art of cooking on stainless steel. (After all, it’s 2025, and non-stick pans are OUT). I’ve been using Fissler’s M5 Pro-Ply Collection non-stop to make delicious recipes like this one. Check out all of the details below!
Place your sourdough slice on the pan. Flip once it is golden brown, and toast the other side.
Remove your sourdough from the stove and set aside.
Fry the Eggs:
Add a bit more avocado oil to the pan.
Crack two eggs into pan.
Season with salt and pepper.
Place the lid on your pan and allow the eggs to cook – no need to flip your eggs!
Prepare the Avocado:
While your eggs are cooking, cut your ripe avocado in half and remove the pit.
Slice the avocado into several very thin pieces.
Remove the avocado slices from the skin using a spoon.
Assemble the Toast:
Spread the avocado slices onto the toasted bread.
Once the eggs are cooked to your liking, remove them from the pan.
Place the cooked eggs on top of the avocado.
Season with more salt & pepper

A Few Thoughts:
I know that some people can be intimidated by the idea of cooking on stainless steel pans, but in reality, it is much less complicated than you may think. Here are my two best tips when it comes to stainless steel:
Choose the right brand! A high-quality stainless steel pan is the most important step. Fissler’s M5 Pro-Ply Collection is my go-to when it comes to cooking anything on the stove!
Allow the pan to thoroughly preheat before placing food on it. This is what will keep food from sticking to it or burning.
While this recipe has been my go-to breakfast, it would also make the perfect pick-me-up snack in the middle of the day. Instead of reaching for that extra cup of coffee at 3:00 pm, try fueling your body with some healthy food first!
