When time is tight, and you need a quick, healthy dinner solution, this pre-made cauliflower pizza from Costco is a lifesaver! It provides a great nutrient-dense base that’s ready to go on its own, but to make it even better, I love adding my own toppings to boost the flavor and nutrition.
With some chicken sausage, a bit of cheese, and grilled onions, this pizza becomes a protein-packed powerhouse. It’s the perfect ViCera Phase Three Meal because it’s both nutritious and high in protein. This easy and delicious twist on a store-bought favorite has become a go-to in our house, and I hope it will be in yours too! Let’s get started on making this quick and healthy dinner together.
Ingredients:
1 Roasted Vegetable Cauliflower Crust Pizza from Costco
1/2 Cup Mozzarella
1/4 Onion
2 Simple truth Chicken Sausage Chorizo Style links from Kroger (or similar)
Directions:
Preheat your oven according to the pizza package instructions.
I usually grill some onions until they’re nicely caramelized, but if you’re short on time, fresh onions work just as well.
Cut up 2 chicken sausage links into bite-sized pieces.
Sprinkle the sausage pieces over the pizza, along with some mozzarella cheese and the onions.
Bake the pizza as directed on the package until the cheese is melted and bubbly.

Add sliced black olives, crumbled feta cheese, and a sprinkle of oregano.
