Spicy Sriracha Salmon Power Bowls are a hit in our house, especially when my oldest daughter comes home from college. She always asks for this meal—it’s her absolute favorite! With crispy, spicy salmon, fresh veggies, and fluffy rice, these bowls are not only delicious but also super easy to make. Perfect for when you want to whip up something special but don’t have a ton of time. And if you’re following the Vicera diet, you can easily swap the white rice for cauliflower rice during Phase 2. Trust me, your family will love it!
Ingredients:
Salmon:
4 4-ounce salmon fillets
4 tablespoons of coconut aminos (acts as soy sauce)
2 tablespoons of honey
2 tablespoons of sriracha
3 cloves of garlic (diced)
3 tablespoons of water
Bowl:
2 cups of cooked white rice or 2 cups of cauliflower rice
Whisk together all the marinade ingredients in a large bowl.
Add the salmon to the marinade and let it marinate for up to 1 hour, but ideally at least 30 minutes.
Heat a large skillet with a splash of oil. Once the salmon is done marinating, cook it in the skillet for 2-3 minutes on each side to get a nice crisp.
Keep the rest of the marinade on the side for now.
Add the marinade to the skillet and cook until the sauce thickens.
Assemble your bowls with a bed of rice (or cauliflower rice), then add the salmon, avocado, cucumber, and top with spicy mayo.
Sprinkle with sriracha or extra coconut aminos.
Serving ideas:
Classic Bowl: Serve the spicy sriracha salmon, fresh veggies, and avocado slices over a bed of fluffy rice. Top with spicy mayo, onion, and red pepper flakes for an extra kick.
Low Carb Option: When you are in phase 2 of the ViCera diet, swap the rice for cauliflower rice. Simply steam or sauté cauliflower rice and use it as the base for your bowl. This version is equally delicious and lighter on the carbs.
Salad Style: Transform this dish into a vibrant salad by layering crispy salmon, sliced avocado, cucumber, and onion over a bed of mixed greens. Drizzle with sriracha mayo dressing or your favorite ranch dressing.
Grain-Free Option: If you’re following the ViCera diet, serve the spicy sriracha salmon alongside roasted vegetables like broccoli, bell peppers, and zucchini. Add a dollop of avocado and drizzle with sriracha mayo for a satisfying and grain-free meal.

A Few Thoughts:
When I’m cooking for a big group of 8 or more, my Blackstone grill is my go-to. It’s got plenty of space and cooks everything evenly, which makes preparing multiple servings of crispy sriracha salmon a breeze. Plus, there’s something about the way the salmon crisps up on the Blackstone that adds that extra crunch we all love. So, if you’re planning a gathering and want to serve up some delicious salmon, the Blackstone grill is definitely the way to go.
Directions for the Blackstone:
Preheat the Blackstone Grill: Start by preheating your Blackstone grill to medium-high heat.
Oil the Grill: Once the grill is hot, lightly oil the cooking surface to prevent sticking.
Sear the Salmon: Place the salmon fillets onto the hot grill, flesh-side down. Let them sear for a few minutes until the flesh becomes crispy and golden brown.
Add Water and Cover: After searing, pour a splash of water over the salmon fillets to create steam. Quickly cover the grill with a lid or a metal bowl to trap the steam and cook the salmon through.
Remove Skin and Chop: Once the salmon is cooked through, carefully remove the skin from the fillets using a spatula or tongs. Then, roughly chop up the salmon into smaller pieces to make it crunchy all over.
Continue Cooking: Flip occasionally, until the pieces are crispy and golden brown on all sides. This process should take about 7 minutes in total, as the Blackstone grill cooks quickly.
Feed the Salmon Skin to Dogs: As a bonus step, don’t forget to feed the crunchy salmon skin to your dogs! It’s a nutritious treat that’s good for their coat health. You will have one happy pup!
